In the 33rd edition of the red guide’s Main Cities of Europe 2014, Greece gained a new two-starred restaurant for the Funky Gourmet in Athens, which serves avant-garde, playful cuisine where ice cream sandwiches are “smoked”, peas are cubed, and pesto gets deconstructed with mortar and pestle. Funky Gourmet is a small restaurant with a warm and inviting ambiance and one of Athen’s best dinning destinations, where molecular gastronomy transforms traditional Greek dishes into an amazing experience. In its limited space, the two chefs, Georgia-Anna Hiliadaki and Nikos Roussos, express their personal concept of an avant-garde, innovative cuisine, based on top-quality seasonal ingredients with an emphasis on refined flavours and the use of quite a few advanced techniques.

After completing studies at the Institute of Culinary Education in New York and their subsequent work at the world-renowned restaurant that was Ferran Adrià’s El Bulli, they decided to test out their innovative ideas in their own establishment. It is housed in a beautiful neo-classical building, located in the Keramikos quarter in the very historic centre of Athens. And very soon after opening, it was ranked as one of Greece’s best restaurants. In 2010, Funky Gourmet was also given the Gourmet Award for Best Arrival of the Year and a year later, its two chefs were awarded the Chef of the Year Gourmet Award. Now, in 2014, it has two shiny Michelin stars!

And yes, to think that it was the very perspective of cooking as an art form, arousing senses and awakening memories, that actually inspired Chefs Georgia-Anna Hiliadaki and Nikos Roussos to give birth to Funky Gourmet back in 2009, it’s inspiring enough not only to taste these pieces of art, but to also pay your respect to these two bold Cuisine Samurais who managed the closest there is to the Impossible.
